I can't believe how fast my undergrad is going by.... Anyways, I plan to start studying in the summer (I'm a sophomore) and most premeds take it in March. Something about being able to take it twice...

Is this beneficial? I want to take it for the first time in the summer of junior year (have lots of free time beforehand) and then retake it if necessary.

Don't retake. Study until you are ready and do well. Trust yourself and work hard.

Is it a test that makes it clear what you should know? I couldn't even imagine how to begin studying.

Yes it is an application test meaning the aamc posts what material (background knowledge) is required then you are tested on the application of that material. But you should know that the test is changing a little in 2015 to accommodate for the social sciences. So you need to factor that in when you are preparing.
