I am currently a freshman and I just planned out all my prereqs (when I will be taking this course etc.) I was just wondering if medical schools want you to take MCAT as soon as you are done with your prereqs. Do you think I can wait a year and then take the MCAT? I think I will be done with all of my prereqs by the spring term of my sophomore year and I feel like taking MCAT during the summer right after that seems kinda early for me. What do you think about taking it right after my junior year?

Most people take the mcat during their junior year at some point. April/May is the latest you want to take it if you're applying for the next cycle (which begins in May) usually. Med schools don't really care when you take it but I do believe the test can't be older than 2 years (I think?) or they won't consider it.
 
Take it whenever you think you would do the best on it. If your pre-reqs are fresh and you have had a comfortable amount of time to review and practice, go for it then.
