What psych research are you interested in? And why are you interested now in an MD/PhD, when you applied to MD programs previously? These are important questions you might be asked.
Generally, MD/PhD students can choose from most PI's under their respective institution and affiliates (though this differs by school). Many of the programs in your MD list (Stanford, Mayo MN, Einstein, Sinai, UCSF, Vanderbilt) are excellent generally with regard to psych/behavioral research, and if you are set on becoming a physician scientist, I would apply to their respective MSTPs. Note that UF, BU, and Dartmouth are not MSTPs. Others to consider are:
1. UCSD
2. Baylor
3. UTSW
4. Minnesota
5. OHSU
6. WashU St Louis
7. UPenn
I'm not sure what the person you shadowed told you, but psych research - especially in neuroscience - is vibrant and expanding constantly. It might be one of the best fields to pursue as an MD-PhD in the 2020s.
