I think writing the personal statement the year before you apply might be too early. You might have an experience that will greatly affect you in the coming year that you can write about in your personal statement.

I agree on holding off on your personal statement. I'd do that maybe over winter break or when AMCAS opens in May. It'll give you time to get more experience under your belt.

Right now, you should be organizing your CV to write out your extracurriculars. The other big thing is that if you didn't get LORs immediately after those classes, you should meet with any professors you want recs from to see if they remember you well enough and can write you strong letters of recommendation. Having these in early can speed up your process greatly, especially if your school writes a committee letter.
