I would like to buy one (and preferably only one) book on medical spanish. Could anyone recommend a book that they are thoroughly satisfied with and would recommend?

"Spanish for Healthcare Professionals" by William C. Harvey is a great resource. Written by a gringo, as he puts it, and easy to follow.

I don't know if this helps, but I found this website invaluable for my EMT work. I think it is a little more useful if you have some basic knowledge of Spanish, but it makes a great phrase book irregardless.
