Ok so I got an interview at midwestern AZ but do not have physiology and anatomy pre-requisites. So how is this going to work? Are they going to require me to complete these courses before I enroll?

Yeah, you need to have ALL the pre-req courses complete before you enroll next fall

Ok so I have my interview in late November and they will accept or reject me a week after. I will not be enrolled in either class during the fall. Does this mean they are going to give me a conditional acceptance saying I have to complete those courses by next fall for me to graduate.? Is there such a thing as conditional acceptance..? What if I do not complete them by the time I enroll..? Do they defer my acceptance or reject me all together.

I am asking because I will not be able to complete those courses during the fall and winter but will be able to during summer next year.

Then there might not even be a point of going to the interview. A lot of schools require that you finish their pre-reqs before summer of the year prior to enrolling in the school. I just checked their website and they don't seem to say when the prereqs need to be finished by. I would email them and ask them if taking a summer class is a posibility right before starting school, or somehow work the class into your winter schedule.

They do offer acceptances based on the condition that all their pre-required courses are complete at the time classes start.

After your interview in November, they will not necessarily accept or reject you a week after, schools are not required to make any determination by December 1st. It could be months later before they tell you anything (and yes I know this for a fact).

If you do not complete the pre-reqs before school starts, you will not be deferred, you will be rejected. Finishing them in summer school is fine, just make sure your summer school will be finished and your transcripts sent to Midwestern before orientation (late August).
 
Interviews are already scheduled well into late November? I guess the chances of an interview or Dec 1st acceptance decision are already slim.
