I need hours for shadowing but the dentist is allowing me assist him by holding the suction and prepare equipement for procedures. Can this still be counted for shadowing for application purposes? Would the admission committee think low of this?

You are observing what dentistry is all about (shadowing) whether twiddling you thumbs or holding a suction tip in your hands. All the good doctor was trying to do is to make you feel more at ease.
