Mormon culture places a lot of emphasis on education so you are likely to find a large number of Mormons in just about any higher educational program - from law to medical to PhD programs.
(BYU did an interesting study a few years ago showing that higher education actually showed a positive correlation with religious activity in the Mormon faith. This is in contrast to a strong negative correlation between religious activity and education in the rest of the population. Just thought that was interesting.)
Anyhow, I think you both are pretty much right about the popularity of dentistry with Mormons. While Mormons haven't practiced polygamy for over a century, they do tend to have large families, and dentistry provides sufficient income and free time to be a good parent. Also, the Mormon church doesn't have paid clergy so it's important to a lot of Mormons that they have time to spend doing church work. 🙂
