Let me know if this is right please (from most to least time consuming):
1. Essays (personal statement, disadvantage statement, most meaningful activities, regular activites)
2. Classifying coursework (Any tips about how to do this efficiently?)
3. Everything else is less time consuming than the two points above?

(Just checking: Application can be submitted without LoRs which can be added later?)

Yes the way you ordered the AMCAS elements above was what I experienced in both of my application cycles.

And the answer to your question about LOR's is also a yes. N=1 though!
