I'm a long way from applying but I'd like to come up with a list of schools I have a shot at getting into for purposes of planning my prereqs, etc. I know most people base this off their state school, but I probably won't get into mine. What schools would be doable for a CA resident with a GPA below 3.5 who volunteers a lot, has international experience, and speaks Spanish (assuming I do well on all my prereqs and MCAT of course)?

You're obviously going to have a better chance at private schools than at state schools (that aren't your home state). There are plenty of mid- to low-tier schools that you could have a good shot at, especially if you do well on the MCAT.
