I'm in a place where I need to decide to stay at

1. My current research position at a Pharmaceutical company for Biological R&D
Pros: Paid 18$/hr (500 hrs so far)
Stable and familiar work
I'm constantly learning and enjoy work environment as well as co-workers
GI-related research
Cons: No publications
Not relevant to future career of wanting to become a physician
LORs are not relevant

OR...
2. Apply for research positions On-Campus
Pros: Publications and LORs
Cons: Unsure if I will get a position
May do research I do not enjoy/irrelevant or stuck doing minion tasks (washing and cleaning dishes)
No GI-related undergraduate research available

Reasoning: I am interested in doing GI Biology-related research and enjoy my time at the Pharmaceutical but I know that it seems pretty irrelevant on resumes for MD

Getting a publication is rare, and isn't going to land you an acceptance. Why do you say your job isn't relevant to being a doctor? because it's not clinical?
Not everything you do has to be 100% related to Medicine.

What are LOCs? Lines of communication?

A stable work history looks better to me, especially in an age where residency is the very first paying job a med student gets. And unfortunately, they don't come with good work/job ethics.

I think LOC = LOR (letter of commendation vs recommendation) ?

Anyways OP, please do not switch jobs just to try and impress admissions. A good stable gig you enjoy in pharma R&D is not something to throw away over that. Pubs are not a guarantee (especially if you're a low level tech washing dishes), pay is usually not as competitive in the university realm compared to private pharma, and really this is unlikely to matter for your application the way MCAT, GPA, volunteerism etc are.

You should post info about your application over in What Are My Chances if you are trying to figure out weak spots to work on before you apply.
