So I don't know how long it would take you to "find a groove for college," but...
I personally wouldn't do summer classes because they are not covered by your scholarships, they cost more (semester fees) than if you just had 3/4 more credits a fall/spring semester, AND you miss out on opportunities (like having breaks, significant ECs, study time for the MCAT, etc).
Alright, I understand that Ochem sounds scary, but non-science and biology courses should NOT be any of your worries. Unless you're an INTP, you DON'T lollygag around as much as I do (don't you dare argue with me on that).
I'll tell you here and now that the best way to make sure you get an A in memorization courses is to...
1) invest in a recorder and/or know how to take notes by using abbreviations (+ for and, AA for African American, e- for electron, etc)
2) study correctly by linking ideas, thinking of acronyms, making condensed notes and/or using quizlet.com, studying right after lecture, reciting/summarizing on paper frequently, ect.

The truth is I think all pre-professional students should take a heavy course load for at least one semester. Basically, any of your plans are FINE.
