Need help with scheduling

I have 2 years of school left, and I am already one year behind due to a gap year. Due to a scheduling error, I am yet to take organic 2, and have forgotten much of organic 1 already. My schedule is very dense over the next 2 years, and I had planned to take organic chemistry 2 over the summer before my senior year; the problem is that that summer is pretty much the only block of time I will have to study for the MCAT before graduation. I can't really fit organic into the regular school year at this point, unless I want to really risk hurting my grades (I'm already overloaded with the science classes).

TLDR: Need to take organic 2; have 2 school years and 1 summer to do it but can't really fit it into the regular year.

Should I:

  • Take organic and study for the mcat in the same summer
  • Try to squeeze it into the school year and take a 5 science course semester
  • Take it the summer after I was supposed to graduate and graduate in the summer instead of the spring (if even an option?)

I hate the thought of maybe having to cram it into one of my fall/spring semesters, but that might be my only option... Any advice?
 
I would just take it while studying for the MCAT. I actually took a full course load while studying for the MCAT and I did alright (balanced 30 you can check my MDapps). At our school, the second half of organic chemistry was a lot of biochem, which will be extremely helpful for the Bio section of the MCAT.
