How do you know that the neutralization of HCL and CaCO3 looks like this:

CaCO3 + 2HCl --> CaCl2 + Co2 + H2O??

Normally you would write something like:
CaCO3 + 2HCL --> H2CO3 + CaCl2

BUT in water:
H2CO3 --> H2O + CO2

Just something you need to memorize. Similar deal with NH4OH I think
NH4OH -> H2O + NH3
