Non-Science LOR Dilemma

Apparently a non-science LOR is a requirement, but unfortunately I am not close to any of my non-science professors. I am a senior at a small private Christian university. I want to approach one of my professors for an LOR, but I don't know which one, so I wanted to see what you think...

Option 1:
Class: Ethics in Healthcare
Pros: Know the professor pretty well, and she knows how I process things due to the nature of the class.
Cons: She's a kinesiology professor, so is that considered science or non-science?

Option 2:
Class: Multiple Christian Theology classes
Pros: Know this professor very, very well
Cons: I go to a Christian school, so I don't know if the adcom would view this position negatively, because the classes are Christian Theology taught from a Christian perspective

Option 3:
Class: Freshman US History
Pros: I did well in the class
Cons: I don't know the professor much, so I don't know what he could write about me.

Option 4:
Class: Upper division English requirement
Pros: Worked closely with professor, one of my favorite classes
Cons: He's an adjunct, I'm not sure he remembers me...

So, what do you guys think?
 
You have to get someone that knows you well, so forget #3 and probably #4.

I would ask #2. As for your concern about negative opinion, the adcoms looking at your app will already know you attended a christian school, so their opinion (be it positive or negative) will already be formed. You took multiple classes with this professor and you say you know him/her very well, so its a no-brainer.

To me, option 2 seems like the winner because the professor knows you so well. I can understand the concern with the perceptions of the adcom. If it is a well written letter, though, it will speak to you as a person and student, which ultimately is what you want.
 
I guess I don't understand #4. You worked very closely with the professor, yet you don't think they remember you?

Yeah, maybe it's my own insecurities. I visited him a lot during office hours, and he helped me dramatically improve my writing abilities.
