Non-science LOR from graduate student instructor??

Hi there, unfortunately I was not as proactive as I should have been and just found out that two of my state schools - FAU and FIU - (and Hopkins and Harvard, which I was going to shoot my shot at since my stats are competitive) require a non-science LOR.

I emailed an English professor several days ago but the chances aren't great that they would be willing to write me a letter - plus it's the summer and they might simply never respond to my request. (I plan on following up on Monday but I'm not optimistic).

That being said, I really don't want to throw away my chances at two state schools so I'm looking for other options - the only one being a graduate student instructor of a creative writing class, who at the time was a Master's student but is now a PhD candidate at another institution. She was not just a TA - I checked the schedule of courses and she was listed as "Instructor", with no supervising professor. Would this letter work?

i know this isn't ideal, but you could possibly explain your situation to this student instructor, and ask if they would be willing to write the letter and then have it signed by the professor

To clarify, the two individuals mentioned taught different classes and have no relation to one another, and the grad student instructor did not seem to have a supervising professor (at least according to the class description and the syllabus). Thanks for the suggestion though!
