Non-Science LoR Question

I was under the impression that the non-science LoR didn't have to come from a professor. I think that's how it is with TMDSAS schools, but I think I might be wrong about assuming that's how the AMCAS schools are as well...and this might throw off my application time frame. Could someone please provide me with some insight? Thanks!
 
I'm pretty sure it has to come from a professor unless you've been out of school for a long time.

I'm currently freaking out because my non-science LOR writer went out of the country for the summer the day before AMCAS opened up. She just emailed me that she has neither letterhead nor access to a printer and asked if that would be a problem... I figure this is a problem considering most med schools require LORs on letterhead with a signature.

I've not taken a non-science course in nearly 3 years. Most of my other non-science profs are retired. I have a letter from my boss at work, but other than that, I'm kind of at a loss at the moment 🙁
 
I keep reading that you need an LOR from a non-science professor on SDN but I can't find anything to back it up at the schools I'm planning on applying to. Which schools specifically require a non-science LOR, and if they do, how many of them don't accept a premed committee letter in it's place? I can't find a single one yet...
