A paper I wrote for a graduate linguistics class that I took will be published in the Journal of Sociolinguistics. Will adcoms be impressed? I have been doing biology/chemistry research for three years and I have only been able to present at a national conference for one of the projects I worked on (no publication). Will they view this as incompetence?

Well, I have done extensive research for a period of 3 years. It seems as if I should have gotten something published with that much research experience...
 
A presentation counts for something.

Besides, your performance in medical school isn't based upon your ability to publish research. Nothing about that will be seen as negative.
 
Research takes weird twists and turns. If you've been working on something for three years but didn't give you the publishable results, that's just the way it is.
There are grad students who don't get pub until their third year and sometimes they're not even the first author. So don't worry about not having your work published.
Publication is a plus, but not a must.
