Is it possible to get one from a math professor for the non-science LOR? Or, is it better to go strictly with the humanities profs? Thanks for your help!

I'd go with someone out of the BCPM courses (bio, chem, physics, math), so yes, go with a humanities prof, unless you think they will write you a really bad letter.
