So I got an invite from Northwestern, and am confused as to how many interviews there are. It says a panel interview, and individual interview with a dean/administrator, and a "conversation" with current students and faculty. Is this "conversation" an interview or is it an informal thing?

I'm not certain but going off the interview schedule and website for Northwestern: there is a 20-30 minute convo with admissions officer/dean and then you go into a 1hr-1hr 15 min panel interview. The panel consists of about 3-4 interviewees and NWU faculty and a 4th year med student.

Breakfast, closed-file panel interview, open-file faculty "conversation" (really not an interview, more of an application update), tour and presentations.

whats an "application update"

whats an "application update"

They just go through your application and ask if you have anything to add. They also asked for a clarification on a few ECs. It was more of a conversation for me. The woman picked a few of my ECs and asked me how I liked them. Very low stress. I don't remember if they labeled it an "interview" or not, but it felt more like an opportunity to clarify or elaborate items on your application.

Three people interviewing three applicants, closed file. There was a med student, internist, and a neurologist who did research. They asked questions ranging from "What CD is in your car right now?" to "Describe an ethical dilemma you faced and how you dealt with it." It wrapped up with asking all three of us to come up with a plan (together) about how we would restructure healthcare in New Orleans (this was right after Katrina).
