Note taking during interview?

What has everyone's experience been with this? Obviously not taking notes during the conversation with the interviewer, but if I have questions that I am genuinely interested in knowing the answer to and care about the answer, would it be weird to jot down notes on what the interviewer responds? Maybe some input from adcoms who conduct interviews would be helpful here. Thanks!
