Number of LOR needed

So I made a mistake when getting my LORs for the application cycle. I didn't see any min. number required on AADSAS or in the supplemental materials section of the schools I applied to, so I figured there was no min. After I submitted I was looking on schools websites for where to send the app fee and I noticed that most ask for 3 letters. I submitted two LORs one from a science prof who knew me well and one from a dentist who also knows me very well.

I am having a hard time finding a third person to write a letter. I graduated 3 years ago, so there are not many profs who I think will still remember me. I have been emailing my sciences professors and asking if they would write me a letter, but I haven't heard back from any of them yet. Most of them are probably on summer break. I have about 2 -3 more that I can email.

I'm nervous that the schools won't view my app as complete until I get them in. Anyways I was just wondering if anyone else was in a similar situation? Should I call the schools and ask if the 3 letters in an absolute requirement? Thanks for any input!
 
You can always ask the schools, but they tend to be pretty strict with their app requirements (to ensure everyone is on an even level). However, I was in a similar situation in that I grad. in 2005, and I went back to school for my pre-req's in 2008. I had only 2 science profs, and only one did I know well enough for an in-depth LOR. Still, I explained my position to the other prof, and he wrote me an LOR, too (it helped that I got an A in his class, I think). Prof's are understanding...I'm sure, if you tell them your situation, any of them will give you an LOR...
