I know someone that did obesity fellowship and then matched GI... took about 4 years, but eventually was offered GI.

worked in obesity medicine as director setting up an obesity clinic. Worked with GI and got to know the faculty...eventually was able to get a spot. Wasn't the easiest thing and definitely no guarantee...and frankly had to suck to go back an be a trainee after being an attending for so long...but he really wanted GI.
