What is the difference between Addition-Elimination reaction and Substitution reaction?

Aldehyde + primary amine becomes imine, and that is supposedly an addition elimination reaction.

I understand that the nitrogen is added then water is eliminated, but wouldn't substitution also serve the purpose to describe this situation, since at the end the nitrogen substitutes the oxygen?

Any chem gurus out there, all help appreciated.

In a substitution...say for example Ch3I reacting with a strong nucleophile, the iodide would be "kicked out" by the nucleophile

in an addition reaction....say something like the grignard reagant acting with an aldehyde...the carbon in the grignard is nucleophilic and will therefore attack the carbon on the carbonyl which by seperation of charge is more positive....
