I am a second year who is considering a 4-year oms residency. I've heard that during the general surgery year you can work 100 hrs +. What about years 2-4. Do you get any days off (weekends, holidays)?

4 year residencies don't include a general surgery year- they do a few months.

As to the gist of your question it really varies by the program...there are some 4 or 6 year residencies where you'll work lots of hours every year and some where you'll work relatively few every year. It just varies by individual location. Some programs adhere to the 80 hour work week mandated for medical residencies and some don't. Your best bet is to talk to residents at locations you want to train.
