On the USMLE transcript that's released to the schools does it show the exact date I am taking a test?

No. Results only show on your transcript once a score is reported / finalized. So, if you apply on Sept 10 and you took Step 2 on Sept 9, it would NOT show up as your score isn't finalized yet.
