I am taking 3 course this summer; Calculus 2, Psycology, and English(writing). However the english is online. I am taking other english course before I graduate so I know colleges that only require 1 semester will be fine with the online course. But what about schools like UoP that require 2 semesters of english?

Isn't english 1 and 2 both in the core curriculum for your school? Most of the time, those are the two easiest courses to CLEP out of, so you might want to go that route if you don't have the time to take the actual course. The way you reflects the type of person you are, people are very judgemental, if you can properly type or write a letter, a lot of people will not have respect for you, academically and professionally speaking of course. I think that the online courses should be fin, credit is credit, right?
