Anyone know of any online public speaking courses that would count for prereqs for vet schools?

I took one from my state school's summer classes. It was online/zoom because of the pandemic, but I think there were online options otherwise. The title of the course was just "Public Speaking" I believe. Perhaps your local community college or state school has one too.

Check out your local community college, I was able to take one online during winter semester!

I took Human Communications online at my university over the summer. Not public speaking, but it did satisfy the prerequisite for the schools I applied to that required it. Check with the schools you plan to apply to if something like that would count before you register for it
