Why does the the ester not form the bottom picture (I made that in paint believing thats what the products are). I know, or think I know that LAH will reduce esters to form 2 alcohols, not the above picture! Anyone?

Just like you said, the LAH will reduce the C-O double bond to an alcohol. However, only the double bonds are reduced, which is why your OCH2CH3 stays on the same form.
 
ethers get reduced to 2 alcohols.

also carboxylic acids get reduced into a primary alcohol and not a geminal diol

The product on the bottom is correct, except that there should only be one OH on the left side.
