I only need 5 more credits to graduate and I am considering being a part time student next semester to save myself $6000. If Im accepted after December 1st and I send in a deposit to a school, will this school care that I am part time? Or do they only care that you graduate and get good grades your last semester?

They won't care - I have been a part time student the past 2 semesters and was able to get interviews. Someone at one of my interviews had not taken classes in over a year

If you are happy with your GPA, and have taken a decent number of upper level science classes, than sure, go part time. It is perfectly understandable that you want to save some money. If you think there might be a few more classes that would help though, consider that it might be harder to be enrolled later if you don't get into D school this year. Make sure you keep busy- shadowing, volunteering, working, etc.

I have an interview on Friday and I haven't been in class since May 2014.

I'm a part-time student for both semesters this year and it's been fine interview-wise.

My mother was diagnosed with cancer and I took a reduced course load in my Fall semester (6 credit hours) to help out at home and take care of her. In the Winter semester I took 9 credit hourss.
Will this reduce my chances when applying?

No it wont. I had two semesters of light course loads and I was fine interview wise as well. It was never even mentioned by any interviewer either 🙂
