So, I am trying to figure out how I should format my personal statement on the AMCAS application. Right now I have it with each paragraph separated by a line break, is this typical? Is there some more optimal way? I don't really want to use four or five spaces in place of a tab because that would put me over the limit for characters so really what is the optimal way to do this?

I used a line break since it won't really let you indent (unless you use up spaces like you said). 2 hits of the return bar < several spaces.

I think most of my friends did that too. In the end, I doubt it really matters. I think it looks better with the line breaks, but I'm sure it's not really something the ADCOMs look at 😉

Most people separate paragraphs with line breaks. I stopped indenting things in high school, and rarely see this in personal statements. Please separate your paragraphs, or I may become angry at you before I ever read your PS, which doesn't bode well for your application.
