I recently got my OCS last year, and with all the studying I did I realized one thing. I really do not know alot, and feel I need to learn even more to become a better therapist. Things are constantly changing, and I feel that completing a fellowship will make me a better therapist and keep me up with the new techniques and treatments.

I was wondering if anyone on the forums has done a fellowship and what they felt like they got out of it? If I were to do one, i feel like doing one that is in conjunction with a major college/university would be the most benefit to learning as opposed to one online (EIM) (even though I have taken some of their classes and they were good).

Be careful which one you choose - much of the basis for manual therapy is founded in biomechanical mumbo jumbo and relying on palpation to (unreliably) diagnose and treat pain problems. If the fellowship doesn't have respect for the nervous system and pain science, then I'd keep looking.

Also, you're going to lose a lot of income as a fellow. Are you sure you want to do that, when you could probably continue to improve your ability to treat patients just by carefully selecting and attending CEU courses and diligently read the relevant research?
