I was planning on taking physics and its lab courses this summer. However, the courses have been moved online. Is it still ok to take these courses to satisfy my prerequisites?

Yes--essentially that is your only option unless you want to wait an indefinite amount of time for on-ground classes which will probably be already filled up.
Remember that everyone in your cohort is in the same situation. Professional schools (nursing, med, dental, pharm, etc.) will definitely make the exception to accept online courses and online labs as otherwise they will "shoot themselves in the foot", so to speak, and lose a lot students and their tuition $$.
