When does this usually happen? I would like to think that I want to go into Neurology...but I really don't know much about it other than the basics.

In Med. School are you required to taste, if you will, each of the specialties or are you asked like on the application what your end-game is?

Also, does your major affect your Specialty at all? I want to major in Psych because I think I like Neurology but if it turns out I don't am I screwed?

Your major has no effect on your specialty and you will definately get to taste many specialties in med school.
 
Most people change their minds like 3 or 4 times in medical school. After doing rotations, you have to have a clue a couple of months into 4th yr. However, I here that 20% or so even change their minds in residency and jump programs or start over.

I am thankful I am pretty sure what I want to do since I have been rounding some in pharm and been looking around and shadowing alot. Never know until you get to see all though.

This is one of the redeemable things about the American system. It allows for periodic re-invention and in some ways prescribes it. You can major in dance and some on one an adcom will think its cool. You could be a theoretical physicist who decides you want to be a pediatrician. A nose tackle who wants to a vascular surgeon. It doesn't matter.

If you want to pursue you're interests and then follow up on them in med school. cool. if you want to scrap them b/c you ruled them out. cool.
