I am wondering for this question, can I talk about how I scored low due to the MCAT the first time, but improved it afterwards?

Should I not mention that at all? I do not have any course withdrawals or grades below B.

I think you're solid on this one. If your new MCAT is up to par then I don't see why you'd need to mention it unless someone asks you directly during an interview.
