Possible re-applicant, would love advice on how to improve

Well, St. Bernards do rule.
The only problem here is California. You should by all means be trying to get into a UC, and you should by all means get into one, but it might take a while because you're up against a whole lot of overachievers like yourself.
You've already done everything right. Imho focus on doing stuff because you like it. That can make a huge difference. Try to do something that honestly interests you. Why? It makes you more interesting to review/interview if you're interested in what you're doing.
Sure a few more points on the MCAT would help, just be sure your score doesn't go down. Be paranoid about your score going down.

The only reason that you should not get in this cycle is if you did not apply to a dozen OOS friendly schools. You don't need a higher MCAT. You need a good list.
