I was just accepted to Texas A&M and UT-Houston. Just out of curiosity, is there a specific GPA that I have to maintain to keep my acceptance (like above a 3.5 or a 3.0) or can I be done being anal about my grades?

You probably should check the specific guide lines at those schools. For instance, my school has a clause that they can take away your acceptance if your performance significantly drops from what you had when you were accepted or if you don't complete what you said you were going to complete.

I slacked off as soon as I got accepted and really had to struggle to pull one of my grades up to get credit for graduation, so I wouldn't recommend slacking too much... I think you can take the edge off though.

I think a good goal is to keep above a 3.0.

Don't fail....keep a 3.0, but nothing less than a 2.0 and you should be golden.

However, I'd definitely check with the individual schools first.
