Your high gpa is more than enough to get you in. I would just do more shadowing/volunteering and retake the dat. Im surprised that you haven't gotten in bc you have a high gpa and your dat score is still considered average
 
Work on interviewing skills. The DAT is right around the average for acceptees so if you feel that you can do better then retake it. Do more volunteer/shadowing? Maybe pick up research experience. You are not in a bad position at all.
 
wow dude.... you have a 3.7 and no acceptances?
How many schools did you apply for? How many interviews?
When did you apply for dental school? Late?
 
I applied to several schools and was interviewed however I don't really think I am going to recieve any acceptances due to my DAT (18/19/20). Should I go ahead and enroll for some Post Bac/Masters courses or should I gain more shadowing hours. I have a 3.75 cGPA/3.7 sciGPA.

Your gpa is high enough and taking post bac courses is not going to improve your appeal. You should concentrate on improving your DAT scores (esp RC) and if you are lacking ds relevant courses such as micro, cell bio, histology, physiology and anatomy you may want to consider taking them in your down time. And if needed, reflect on your people skills. Check the ADEA stats see if there is a good match between your stats and those of the school you have applied to. If you have shadowed enough to understand what dentistry is all about, doubling or tripling your hours is not going to gain you more traction.
