Option 3 is a terrible idea.
Option 2 - I don't know much about this program, but I'm under the impression that it won't give you a huge chunk of upper-level / grad level bio courses.
Option 1 - This is a great way to improve your chances of getting accepted a year later. This topic has been discussed a 100 times in SDN. Please do a SDN search on "SMP", "1-year masters", "post-bacc dental" etc.
Your science gpa is your boat anchor. I highly suggest only looking into programs that offer a high concentration of pure upper-level / grad level biology classes. Doing well (all A's and B's) for a solid year of advanced bio classes at a 4-year college will prove to the d-schools that you are competitive applicant.
You and the dental schools know that you're interested in Kinesiology, rather than a real bio degree because it's easier.
