Post Doc while in vet school?

So here's the deal - getting my Ph.D really soon (probably by the end of the year) - and I would REALLY like to take advantage of some of the new stimulus money the NIH is giving out by way of grants. I'm looking at some of the 'new investigator' grants available (think they are R-01's) - where you are pretty much guaranteed 250 - 300k over x years (least they tend to give them out like candy).

Now I am not worried about the time commitments, I've already got a full time Ph.D researcher who is interested in collaborating and doing the lion's share of the work, but I would have to be the principal investigator and therefore have to be hold a "post doc" position.

Does anyone know anyone who has pulled this off? Can the Post Doc position be through the vet school? Would they even allow it? I THINK you need to put the grant through within 5 years of getting your degree, and I would hate to miss out on this.

It would also give me the chance to get some more publications and another grant under my name (if I ever decided to give academia a go that would be huge)

What do you guys think?

Just to clarify, I dont actually want to do a post doc - just hold the position (no pay) in order to put the grant through
