In terms of psychology post docs in NY, is it a big deal not to have an APA accredited internship?
Please, anyone with more experience and knowledge correct me if I'm wrong, but I would think that accredited internships would be big deals for all formal post docs, irrespective of location.

Agreed. I applied to postdoc this year and interviewed at a few sites in NY. An APA-accredited internship was a requirement of all but a few sites, and those sites stated that an accredited internship was preferred.
 
It'd be a big issue. Positions are already competitive, so that would make it very difficult. In some/many instances it will disqualify you from positions. For instance, a hospital position may require APA-acred bc the credentialing committee wouldn't approve someone w/o it (bc that is the standard for the field).
 
All of the above, with the (maybe obvious) exception of exclusively research post-docs.
 
Also, (maybe) exception for non accred VA internships to VA postdoc
