I interviewed at 2 schools in early October but they won't let me know until March. I would really love to attend either one and enjoyed my interview days at both places. Would it be smart to send a letter of interest to these schools? I could also update them with my Fall grades in the same letter.

Most schools typically say what their policy is on letters like these. Some strongly welcome them, others are open to accepting them, and there are even some that will hold it against you for sending one. What schools are you concerned about? If you don't recall what was said on interview day about that school, do an SDN search or see the school-specific threads for what the school says about letters of interest.

The gestalt I'm getting from Lizzy M and others is that LOI are routinely ignored.

Well first thing you should do is figure out the school's policy on letters of interest/updates. If they do accept updates post-interview, I would send them a short update on your fall grades (or anything else that deserves an update) and you could also take that opportunity to very briefly mention what you enjoyed about the school/what impressed you on the interview day. Keep it short and let the premise of the letter be your update. Bottom line, if your fall grades are great and/or you have a significant update, it cannot hurt to let admissions know about it if they're open to it.
