I am currently a Chemical Engineering Student/Pre-med student set to graduate spring of 2020. I chose my undergraduate major due to my love of Math and Chemistry. However, it has proved to be much more difficult than I had anticipated and it unfortunately has reflected in my GPA. I have taken all of the required pre-med courses since they were also required for my major. My current GPA is 2.6, which is very low unfortunately. I do think I am able to get that back up to possibly a 2.8-3.0 by the time I graduate. But I still feel that will be too low to get into any decent medical school. So my question is, should I try retaking courses to improve my GPA? Or start looking for a graduate program or post bacc program? If the graduate/post bacc route which schools should I be looking at with my background having taken all premed required courses and no MCAT yet? There are so many different post bacc and graduate programs out there for students who want to go to medical school I am just not sure which ones I should be looking at.

Depending on what you have already taken in biomedical science coursework while tackling your engineering courses, I would look at a graduate program with a rigorous biomedical science coursework schedule. No shame to doing that. You should know if you have taken the prerequisites to help determine the proper set of courses you must include in any postbac direction you take.
