Pre req requirements during app cycle

I did not include calc I and english lit in my future courses AMCAS section. How should I go about letting the schools that require these courses that I plan to do so.

Or will they expect that I know to take them before matriculation anyway. Any insight would be very helpful, thanks!

In general, schools expect you to know their requirements and to act to fulfill them. Some schools where one is accepted will check up on you before a final transcript is due to ask where you are with your plan (or maybe, in reality, to check and be sure there is a plan, in case they need to start eyeballing their waitlist).

Thanks so much! Do you think that this warrants an update letter to the schools in the fall, or will they decide interview invites without caring too much about the pre reqs? (Only Calculus I and English lit)

In my experience, interview invitations will be offered without regard to pending classwork. For schools that welcome update letters, I think it's well worth mentioning a prerequisite class that's been completed, regardless.
