For both dental schools and medical schools, if the prerequisite courses are not met by the time of my graduation, is it fine to take just those missing courses as a part-time student after graduation? Due to the conflicts with my schedule, it's not likely that I will be completing some of the prerequisite courses before graduation.

Of course, you can take the prerequisites any time - even after graduation. And you do not have to take them through a formal program. You can take them a la carte from any accredited school. However adcoms prefer that you take them at a 4-year university or college.

Yes, you can take them post-graduation, just realize that if you are applying at the time, that some schools require them before matriculation and others will require them to be complete the summer you are applying. Each school is different.
