Preserving large tissue samples

Anyone here very familiar with tissue preservation techniques? I've been looking at a lot of protocols but I've kind of hit a wall.

I've been charged with preserving a rather large (from my prespective) sample of human tissue, about 20grams worth. RNA extraction is not the primary goal, we are more interested in the protien expression, though if I'm able to preserve the RNA that is always a plus since you never know. I'm somewhat familiar with smaller samples, like from muscle biopsies, and flash freezing them in liquid nitrogen. However since the sample will be big, I'm not sure if that is the best method since most of the protocols I have found have stated a size limit.

For right now I'm planning on cutting the sample into smaller pieces and flash freezing them but I'm not sure if that would be ideal. I have a couple of people I want to talk this over with tomorrow, everyone had gone home by the time I found this out today, but in the mean time I'd be very happy if someone had some input.
