If we are still waiting on a waitlist, can we send our AMCAS now with only 1 school and then add the schools later (after processing and verification), so as to speed up the process and save money (should we not need to apply this year)? Can you add schools right away, or does it take time when you decide to add more schools later?

Yes I did this. You can send it to one school now. Then you'll be in line to be processed and verified. Then you can add more schools for $30 each school later on. The good thing is you don't have to wait again. Your application will be transmitted within a week of adding the schools.
 
I did something like this. I put one school initially and added others later. It ended up not being a problem, but some schools took forever to download my application. My best guess is that they go through one set of applicants before starting on a new batch. From what I've gathered this would put you at a disadvantage since the process becomes more competitive as the year goes on.
