Professor does not seem to want to write LoR anymore, even though I have her file on AMCAS?

I asked a professor to write an LoR, and she agreed. This was in the beginning of June, and she said she would have it done by the end of the month. I have sent her gentle reminders but she is not answering them back. I understand that she may have some urgent circumstances to attend to, as I have been told she is not going to be in her office for the next while, so I am planning on asking another professor to write a letter for me.

However, I have already made a file in AMCAS for her letter, and sent that file to all the schools I applied to. Will it be okay if I make another file for a new letter from another professor and send that to the schools? What will happen to the old file? Will schools not review my application until they get a letter from her?

I am also applying to Rosalind Franklin in Chicago, and they give a maximum number of 3 for the amount of letters one can send them (I have already sent 3 letter files, one of them being the one for the professor that has not written me a letter). What can I do for this school?

Give it more time, but I think you should go ahead and get the new LOR as backup just in case. Don't assign it to the schools until you know for sure that you've been ghosted by the original prof.
 
Write it yourself and ask your prof to sign it.
