question about LOR

Some backstory: I've been a pastry chef some better part of a decade now. I went part-time this past spring when I went back to school, and made sure to get a LOR from my exec chef before I stop altogether before the fall semester begins. It is a truly glorious piece of writing. I fully intend on getting another two from science professors this coming year and a third from a pre-med advisor or committee or whatever, but I think this one sheds some light on the qualities that I believe will make me a great doctor and is a great supporting document for my personal statement (which I've already written).

Not sure how I would include this in my app (which won't even be submitted until next cycle) since its supposed to be directly through the AMCAS website or Interfolio or something. I've got a whole bunch of copies on gorgeous letterhead with signatures and everything. Am I gonna have to ask my boss to write me another one and submit it directly to AMCAS when the 2019-2020 application opens up? Is there a way to create my own Interfolio account and submit it myself or would that look sketchy? I admittedly was unaware of the LOR submission process before asking him to do this for me.

Submitting it yourself = fraud.

When 2019-2020 AMCAS opens, have your recommender upload it directly, and use their official employee email account.
