Question about LORs

I'm a rising sophomore in UG and I have a few shadowing opportunities lined up this fall. If I shadow a physician and get a nice letter of recommendation, I will not be able to apply to medical school for another year. How do the ADCOMs view having a year old LOR? Do they care? Should I have the physician revise the LOR to change the date to a more recent one when it is time to apply?
 
Prehealth committees usually want a letter from that year. My prehealth committee begins interviews in April, and only takes letters from January of the same year on. Med Schools are sometimes more lenient, however. I've heard of some from this cycle being okay with letters from last summer (2013).
